Creamy cauliflower gems

Cauliflower is not a family favourite here; my husband hates it and our baby won’t eat many vegies at all right now. But I like cauliflower and it’s good for you AND cheap at the moment so I buy it anyway. While Pinterest searching I came across this recipe for cauliflower tater tots. Since potato gems have been a new fave I decided to give something similar a try.

I steamed cauliflower in my microwave until it was tender. I used my Tupperware rice cooker which I am in love with! I then used my food processor to grate about 1/2 cup of cheese (I mixed tastey and Parmesan). I put the blade in, dumped in the cauliflower and an egg and blitzed it until it was smooth and creamy. I tasted it and added garlic, parsley and salt to taste. I then put it all in a bowl in the fridge until dinner time.

Husband bought home some panco breadcrumbs so I mixed about 1/2 cup through my cold cauliflower mix then used spoons to shape the mixture into little gems and places them on a baking tray covered with baking paper. Baked them in the oven at 200C for about 15minutes then served. Everyone enjoyed them and my husband said they were delicious and his fave way to eat cauliflower. They were crunchy on the outside and creamy on the inside, perfect dipped in some tomato sauce.
